Vietnamese Grilled Pork
Spice up your Grilled Pork in Vietnamese style
Vietnamese Grilled Pork is no different to cook than any other recipe for grilled pork except for the marinade.
The sauces, spices and marinades are what makes Vietnamese cooking different from all others. The marinades for Vietnamese grills may be simple, but your guests will find them exotically different.
These recipes for Vietnamese style pork on the barbecue include pork sirloin, diced and skewered, and pork chops in a spicy marinade.
Marinate the Pork
Preferably overnight
First of all, marinate your pork in a bowl, pan or plastic ziplock bag.
Place the pork inside your choice of container and pour enough of the marinade in to cover the meat. (Remember, if you're using a plastic bag, to put the bag itself into a large bowl in case of any leaks).
Put it all in the frig for the next day.

Marinate Overnight
Prep Time: 10 mins
Total Time: 20 mins
Ingredients
- 1/4 cup sugar
- 1/2 cup water
- 6 spring onions (scallions)
- 2 teasp. fish sauce (Nuoc Nam)
- 2 teasp. soy sauce
- 2 TBLsp. vegetable oil
- 6 pork chops (not too thick)
Instructions
- Combine sugar and water in a small pot. Bring to a boil over medium heat and simmer until brown (about 10 mins). Add more hot water till the sauce is thick enough to coat the back of a spoon. Set aside to cool.
- Chop the onions and combine well with the sugar sauce, fish sauce, soy sauce, salt and vegetable oil.
- Put the chops in a large bowl and pour the marinade over. Marinate in the frig for at least 6 hours, even better overnight.
- Cook on the grill for about 10 - 20 mins, turning over once.
For open BBQs
It's hard to cook smaller pieces of food on an open BBQ without a grilling basket.
If you have a piece of pork that you want to slice up, put it in the freezer until it firms up slightly, about 45 minutes. It makes it easier to slice.
Vietnamese Grilled Pork on Skewers
- 750 grams - about 1 and 1/2 lbs pork loin cut into chunks for the skewers
- 1/2 cup finely chopped spring onions
- 3 TBLsp garlic
- chopped and crushed
- 4 teasp sugar
- 2 1/2 TBLsp fish sauce (Nuoc Nam)
- 1 teasp freshly ground black pepper
Instructions
- Combine the pork, spring onions, garlic, sugar, fish sauce and pepper. Stir, cover, and refrigerate overnight
- Thread the meat chunks onto the skewers
- Coat the grill lightly with oil and grill the skewered pork, turning occasionally, until cooked through, 20 to 30 minutes.
Keep Safe when Cooking
Even though the pork was marinated before grilling. you can serve with any dipping sauce of your choice.
